This was my first season with water wetter and after reading I know I have to pull it out before it gets too cold and freezes. My question is can I leave the bike empty after I pull the water wetter? Or do I need to fill it with anti-freeze?

You can leave it empty. Aluminum exposed to air inside the cooling system won't corrode any faster than aluminum exposed on the outside of the engine. If you leave it empty, put a piece of tape over the ignition switch and write "NO COOLANT" on it ...

I don't know anyone that leaves it empty. Maybe we are all just stupid, but refilling with antifreeze and bringing it up to temp; removing the air is part of winter maint. I do know several that save the antifreeze from year to year.
