I spent countless hours reading posts about Galfer, EBC, Vesrah, etc. but I don't remember any of them decisively stating the actual application of use.

The vast majority of the threads are about fixing KHI's below spec brake system. I don't have issue with the brakes on the street. But I know the speech, "ZX6/ZX14, SS lines, bleeding, racial/brembo"...however, I am not commited to making this a track only bike since I 'plan' on getting a track only bike this winter.

Here is what I need to know:
My Gen2 is mostly a commuter that sees the occasional country road twisties, but will see 3 track days this year (2 of the 3 days will be novice). Is there a pad that will function for both track and street that are better than the stockers? Or will I have to put on a set for the track, then switch back for the street? Advantages/disadvantages of the choices?

i run the vesrah rjl for my street and track use....i get great feed back from them and they stop very good

Yes the Vesrah RJL's are for both and work well in both applications.
