I am looking to change my exhaust to a shortie single sided pipe. This pipe will mount on the rear side of the cat, unless I can find a Cat delete pipe. However, There are currently two cables that are mounted to the factory exhaust. Does anyone know what the cables are, what they do, and can I remove them?

So much.....lack of info in here. :dontknow:

Is this for the Gen 2 that's pictured in the avatar? If so, the catalytic converter is in the head pipe. It cannot be removed without punching/drilling it out or replacing it with a full exhaust. If you slap on a midpipe and/or slip-on exhaust, the cat. will remain there and there's nothing else to do to it.

And as already pointed out, the exhaust servo runs those cables. You can remove the cables since the valve is spring-loaded to full-open in the exhaust for fail-safe reasons. But you can't remove the servo. I mean, you can remove it, but it will trigger an FI light. You need to leave it, get a servo eliminator, or reflash the ECU software to ignore the failure.
