The head is bolted directly to the frame at two points. If while pulling off the head I remove these two bolts, do i need to otherwise support the engine, or are the remaining support points enough??

The other supports are enough.

Yep the engine will still hold itself up. There are bolts at the back of then engine that actually thread into the engine. Your other motor mounts up top just squeeze the engine together.
