Regardless of who installed your M/C, if your lever feels spongy, you are feeling air being compressed in the system. Of course, I am assuming that you are not using 15 year old rubber brake hoses.
I don't think it is due to ceramic pads. I haven't tried ceramic pads on a bike but I have used them on a street driven car for years. It only takes a moderate stop or two before the brakes work well enough for normal usage. I just installed Ferodo HH pads in my 10. In the past, I have used Galfers race pads and Carbonne Lorraine SBK pads. The 10 with the Carbonne Lorraine pads has absolutely no spongyness to it and it is using all stock components, except for hoses. For feel, I have liked the Galfers best. I haven't had enough time on the Ferodo pads to give a valid opinion.
