Kill'n deer, mak'n summer sausage.

Well for you guys who like to shoot critters; specifically deer.

Any of you ever butcher or process your own venison?

For years ive done my back straps and jerkey but always sent meat to the local processing guys to make me salami and hickory sticks that sort of stuff.

Yesterday i went to Gander Mountain and picked up a grinder and all the kits to make my own.

All i got to say (don't mind my cuss') Holly Fugg'n Deam....why did i wait soooooooo long. Good thing there is not much fat in this stuff cause im drool'n just thinking about it again, its that good.

Any of you all do your own?

absolutely, growin up my folks never had the extra $ now that we do why waste it on sending the meat out, as there is always something i'd rather get for my bike

also have you ever added bacon scraps to you sausage adds flavor you never dreamed of

No i never did that but lastnight with about 11 beers in my while my buddy and i were get'n a belly ache we ate soo much jerky we were trying to come up with what would be good in the summer sausage and he thought the Cheddar and i though....hmm bacon might be good.

Ill have to try it.

Im actually gonna get some beef and make some more since hunting is over now and practice on a few small batch's and find the perfect blend so i don't mess up my valuable venison next fall.

For the past three years I have lived in Deer heaven. Here in Nebraska there are way too many deer. I have been trying for three years to help but to no avail. They have an anterless only season which is a meat hunters dream hunt time. I killed 17 deer last year in 14 days. More than enough meat and none of it went to the butchers. I did all the processesing with some friends. We actually killed about 70 deer in four or five days. It's insane but if you have the moola for the permits, They don't care. Summer sausage is the bomb and luckily I have some friends that know how to make all of this stuff. I just kill,em and butcher,em and they do the rest. I do have to chip into supplies such as,vacuum bags,wrapping paper and such but it is worth every bit of it. I love to eat venison and since moving here, My wife spends little or no money on Beef!

Is it Fast?

Im in Michigan and we cut our deer herd down so low becuase of some disease outbreaks that the areas i hunt are low in deer now.
