If I had to speculate I bet he did a baseline run with a stock bike w/o emulating ram-air and then rammed a a good flow down the snorkel with the new stacks installed to show the gains on the dyno chart.
I once got an RC51 up to 136rwhp on the dyno by force-feeding it more air than it could really use and adding fuel to match. Unfortunately in the real world conditions that much air was impossible to shovel into the airbox and the bike fouled the plugs from being too rich as soon as we started to ride it out of the shop.
